Taking care of your cheese at home

The very best way to store your cheese is to first wrap in butcher paper, and then in plastic wrap. If only using plastic wrap, you should cut a fresh piece every time you put the cheese back into the refrigerator. Don't worry about mold; cut it off if you don't like it -- Inside is good cheese. Poorly wrapped or unattended cheese will spoil faster. When cheese loses its moisture it loses its flavor. The "cheese drawer" of a fridge is too cold to store cheese. Use the "vegetable drawer" instead!
